Following his early education, he read law under Nathaniel Saxton, Esq. a noted attorney in Flemington, Hunterdon County, NJ. Henry was admitted to practice law by the NJ Supreme Court for the November, 1794 term. Henry Hankinson settled in Washington, Warren County, NJ. He erected the finest brick home in the town upon his arrival. He practiced law from that home for many years. On August 14, 1800, he married Mary McCullough. The ceremony was preformed by Rev. William B. Sloan. Major Henry Hankinson, Esquire, was an elder in the Mansfield-Woodhouse Church in Washington, NJ before converting to Methodism, his wife's faith. He became a member of the Asbury Methodist Church. Mary, his wife, died when their daughters Keturah McCullough Hankinson and Eliza Budd Hankinson were four and two years old respectively. They were raised on their grandfather William McCullogh's Plantation in Asbury, NJ. They always considered the McCullough Mansion their home and were both married from there. Henry Hankinson never remarried. Henry became a major in the Sussex County Militia in 1809. He was a NJ State Assemblyman on and off from 1806 until 1835 representing Sussex and Warren County.
